First day after the challenge

Today when I woke up, I was extremely happy - happy because I could eat and drink whatever I wanted.

Obviously I opened the packet of my favourite Mango and Lychee tea and the aromaa that came out of the box just brought a smile on my face. I made a mug of that with some honey. Mmmm I am sipping it at this very moment as well:) It is soooo good!

For brunch I made smoked salmon-philadelphia-round lettuce wraps. When I ripped off some leaves of the lettuce, the fresh smell of it reminded me of summer at my granny's country-house. These wraps consisted of round lettuce, philadelphia cheese, smoked salmon, dill and lemon pepper - so simple yet sooo delicious!

For dinner I am planning to have some more lettuce, maybe some king prawns. For snacks I might have some olives. I do not have a lot of food in my fridge yet and as it is raining I cannot be bothered to go to the shop either. Otherwise I would have lots of other fruits and veggies as well. CANNOT WAIT to go food shopping!! My favourite part of the week:) 

The next post will be on what I learned from the challenge and some tips on how to shop on budget and what I would have done differently.

Live Below the Line - DAY 5 - LAST DAY!:)

Today I had the Smart Price pot noodles for brunch... The words 'noodles' and 'brunch' do not really go well together, brunch being a quite posh word I think.. and well noodles.. not that posh at all:D

I was quite looking forward to trying out these noodles, as I quite enjoy noodles. They remind me of the summer camps I used to go to, where for convenience everyone always took noodles with them.

I poured the water on my noodles with excitement. The smell was quite nice. After around 5 minutes they were done. I tucked into my Smart Price brunch, but it really disappointed me. It was quite bland in taste, the sauce looked quite disgusting - almost greyish in colour. I couldn't even finish the whole pot... Never will I buy the chicken and mushroom Smart Price noodles again!



Slightly hungry, I make myself coffee - yes I know again that this was not on my challenge shopping list, but I do it also for my constipation.. It really started to bother me, so I made half a cup of coffee to see if it helps. Yes, I was right, it helped. I needed that.

Before work, as the last meal of this challenge, I decide to pop the last 9 chicken nuggets into the oven. I am craving salad and fresh foods, so I am not looking forward to having them, as crazy as it sounds. I can tell you - the Smart Price nuggets are nice. They taste like the McDonalds ones, but are MUUUCH cheaper - I think it was like 72p a bag as I can remember? And there's 20 pcs in the bag. So a good deal - I recommend them for the nuggets-lovers:) I made myself swallow the 9th nugget and went to work.

You can only guess how excited I am to get off this challenge!!! I already went to tesco to buy a couple of foods I can eat tomorrow:)

Live Below The Line - DAY 4

Today I started my day fairly early - at 10.30. I did some exercise for about half an hour and then had breakfast - 2 boiled eggs with a bit of cucumber. I know what you're thinking - Jane, you did not have cucumber in your shopping list for the challenge. Indeed, I didn't, but I found a piece in my fridge and decided to eat it as I did not want it to go bad. I am not going to eat all of my foods I bought for the challenge anyway, so I think it's ok.

At 3pm I went to do an interview/focus group thingy for my coursemate and he provided us with some free snacks. You can only imagine how happy I was to eat something nice for a change. I had some Skittles, crisps, a banana and an apple -YUMMY! So this was my lunch for today. I don't think it can be counted as cheating as I got it for free.

For dinner I had another boiled egg with some boiled and grilled cauliflower. I also had 3 cups of tea today.

The problem I have had with this challenge is that I have been constipated... I haven't been to 'nr.2' for 4 days!!! I really can't wait to get back to my healthier diet!

Live Below the Line - Day 3

Today I woke up at 3 pm, as I went to sleep at almost 6 am last night due to trying to put together a video.

Breakfast was toast with fried egg and beans at around 4pm. Then I boiled some rice to take with me to uni. When doing uni work, I always start getting sweet cravings... so unfortunately... I cracked. I bought a Dairy Milk chocolate from the vending machine for 70p. I feel quite bad... I realised that I am just so used to kind of.. getting almost any food I want and sweets, that I cannot cope to live without things like that.

It brings me back memories of my childhood, when I got just one small candy a day. That used to be the total highlight of my day - I enjoyed this one small candy so much and I really appreciated it. Now that I buy a chocolate - yes I do enjoy it, but it doesn't feel as special as it did in the childhood. It's kind of sad, as the older we get, the less we appreciate small things like that. I should really teach myself not to take these things for granted and train myself of maybe having 1-2 days a week that I can treat myself with something like that.  To be honest, I do not eat sweets every single day, but I do crave them every day. I have heard though if you can cope not having any sugar for a whole week, your body is going to get used to it and you will slowly start losing your cravings. Yes it is absolutely hard in the beginning, but will pay off in the end - you will have a slimmer waist and a lighter wallet. I am not sure if I could do that, but I will try to make fruits my only source of sugar.

I was in uni until midnight, so me and my housemate came home and had some tea. This smart price tea is actually quite good with sugar - without its not very nice. I also had some toast.

Tomorrow I am going to participate in a focus group for my friends dissertation and he said there will be snacks, so obviously I am looking forward to getting some different food for a change:)

Live Below the Line - DAY 2


Today I woke up at 1.45 pm. I feel a bit ill – I have a runny nose and I sneeze a lot. I really need tea, so I grab the Smart Price tea box. This time, the smell is really off-putting somehow. It just smells of pure wood and cardboard. I am not a fan of this taste either anymore. Maybe I should just stick to water for the rest of my challenge?

It is 2.38 pm now and I have no appetite for the foods I have whatsoever. I am seriously craving some fresh juicy fruits or cucumbers and tomato. I feel like I need some vitamins in my body. Unfortunately all the fresh veggies I have are carrots – might have some later on... As I have no appetite, I will get on with my dissertation and make food whenever I get hungry.

3.20 pm and I am getting slightly hungry. I decide to make a 2-egg omlette with some onions. Mmm it came out really nice, fluffy and flavourful. FYI I decided to let myself use 3 different seasonings throughout this challenge – salt, pepper and potato seasoning(from Estonia). Just some cheese and fresh tomatoes are missing from this lovely omlette.

Around 5 pm I feel like I need a snack, so I make myself a toast and put some carrots on top. Weird combination, but actually quite niceJ  I also cut a banana into pieces and pop it in the freezer for a yummy banana ’ice-cream’ movie snack for later on.

At 7 pm I decide I want to have something fresh for dinner, so I decide to make Korean carrot salad (this is how it is called in Estonia). It does require a dash of vinegar and also couple of other spices, but I decide to use them despite the fact I wasn’t planning to allow myself to do that. I think that I will have leftover stuff after this challenge anyway, so I hope that will make it up.

The salad was good, the banana snacks even better, so I am quite happy with my evening meal :) I am going to try not to eat anything more today.

Tomorrow I am going to the library (I didn't go today as it was raining and I woke up quite late). I need to think what to prepare for lunch. I was thinking to make egg-fried rice with some chicken nugget pieces. Sounds quite nice so I'll give it a go, will let you know tomorrow how it turned out.

Live Below the Line - DAY 1


I woke up at 2pm, as this is when I usually wake up. I go to sleep around 4-5am and wake up around 1-2 pm. Weird, I know, but this is what my sleeping pattern looks like at the moment. For this challenge it is actually great because I am technically skipping breakfast, so I need less food.

I woke up, showered, did my usual routine and then at 14.42 started to grab for the Twinings Mango and Lychee green tea with a big smile on my face, as I was really looking forward to sipping it. When I took the box and opened it, the sweet aroma of my favourite tea entered my nostrils, but when I started to grab for the bag of deliciousness, I suddenly remembered – I am doing the Live Below the Line challenge. With a disappointment, I put down the pretty green box of my favourite tea and open the 26p ASDA Smart Price tea box. Instead of the gorgeous sweet aroma, the smell of wood welcomes me when I open the bag. I am suddenly not really looking forward to that daily morning tea. I let the teabag to soak for 4-5 minutes and take it out. I hesitantly take the mug and smell the tea – to my surprise it is not too bad! It reminds me of my grandmom in russia – she always drinks her black tea in the morning, for lunch and after dinner. Yes- the tea does not smell as aromatic as some of the more expensive teas, but for the price, it is great. Without any big expectations, I take the first sip and think to myself – hmm, this is not too bad! It is actually quite nice. It just needs a teaspoonful of sugar or honey and it would be very nice. For this challenge – sugar is a luxury, so I decide not to use it until I go to uni tomorrow and cheekily steal some sugar from the coffee vending machine.

When I finish my cuppa at 15.15, I think to myself that it is probably time to have some breakfast, or should I rather say lunch? Breakfast is always the favourite meal of the day for me, as it usually means fried eggs and toast. I love fried eggs and toast. I take the fancy polish rye bread out the freezer (I bought it for 15p for the discounted price, as it was going out of date the following day) and pop it into the toaster. This is what I normally do on my mornings anyway, as I do not eat bread that much, I always put it in the freezer for it to last longer. While my bread is toasting, I open the box of my smart price eggs. The only difference that I notice between the normal eggs and the Smart Price eggs, is that the SP ones are all noticably different sizes. It does not bother me. I obviously grab for the biggest one and panfry it without any oil. I sprinkle a dash of salt and pepper on it and it is done. I like my eggs rare, with the yolk still bright yellow and runny. Mmm... Oh bugger – I forgot about my toast! As I take it out of the toaster, it is burnt. As the bread I bought is not very big and as it is only one corner of the toast that is burned, I cut off the burned piece and still use it – no wasting in this challenge! I place the egg on top of the small toast. My usual rocket and tomato are missing from my toast, but it does not bother me that much. For the finishing touch, I open the can of Smart Price baked beans and warm up a couple of tablespoonfuls and place them on the plate next to my toast.
 I do a taste test for the beans first and once again to my surprise – they are lovely! The egg and toast are also yummy, but you could still taste the burned parts of the toast. All in all I was very pleased with my breakfast, however I am not sure if I am full yet. I sip on the remaining of my now cold tea and get on with my day doing dissertation.

It is 4pm and yes, I am still hungry – so hungry I cannot concentrate on work. I grab for the banana I had bought for the challenge. I enjoy every single bite of it as it is the only sweet thing I can have during the challenge. Suddenly a banana seems like luxury. Unfortunately I am used to eating everything really quickly, so that banana is also vanished in no time and I am left again with no snacks or sweets to wait for my next meal – the dinner.

I couldn’t wait until dinner, so I had half a slice a toast at 5pm on its own, which did not help much with my sugar cravings. At 7pm I cooked myself dinner – 5 Smart Price chicken nuggets, Smart Price cauliflower, Smart Price vegetable rice and some shredded carrot. The portion was huge, so I was more than full afterwards. Tomorrow I will definitely make less.

The evenings are the worst for me for cravings as this is the time I am watching TV and I always like to have snacks or sweets. Made myself some tea, but the cravings are still there. I know I have a piece of smart price dark chocolate in my cupboard and I cannot get this thought out of my head. I decide to cheat – yes people, I took 3 pieces of dark chocolate. I started thinking to myself – this chocolate cost 30p, I am taking around 1/10 of the chocolate so basically I am eating for 3p. I can maybe skip one of the noodle packs I have and I can have the chocolate in my cupboard which is worth less than 10p. So technically I am not cheating.

I have tried different diets in my life and I have noticed that if you restrict yourself of eating something, then this will be the thing you want the most. It is the same with this challenge – I could not afford to buy any sweets or many fruits, but these are the foods I am craving the most. I am craving a juicy apple or my favourite – sweet and fresh mango. I am the kind of person who really enjoys food and it plays a big part of my life, so this challenge is very hard for me.
Tomorrow I am going to the library and I am panicking already as usually I always buy coffee or crisps or chocolate on campus, but I dont know how I can cope without all these things. We’ll see...

LIVE BELOW THE LINE CHALLENGE

I have always tried to save on food as much as I could - I always calculate what comes the cheapest in grams and I am always in the look-out for different deals. I do love my food, so when I really want something, then I won't usually stop myself from buying it even if it is overpriced.

When I first saw the UNICEF Live Below the Line challenge ad on Facebook, I loved the idea straight away. This is a challenge to live on just £5 for 5 days. As I have a creative writing piece due in May, in which we can write about anything interesting, I thought this challenge is a perfect thing to write about.

The LBTL challenge officially starts on the 29th of April, but I decided to start mine on the 8th of April, as it is just more convenient for me and I can guarantee that I am not going to be tempted to go out this week. I might also do it again on the 29th, but we'll see.

On Saturday, 6th of April I went to do my £5 food shop in ASDA. I had my shopping list ready and I was determined to find some good deals and excited to see what I can actually get for a fiver. Unfortunately for me, I could not stick to my original list, as the things on that list were wayy too expensive for this challenge (brown rice, wholewheat pasta etc).


So here is what ended up buying:

*Smart Price chicken nuggets (20 pcs) - 72p
*Smart Price frozen cauliflower (1kg) - £1
*Smart Price teabags (80 pcs) - 27p
*Smart Price spagetti - 19p
*2 Smart Price noodle snack packs - 2*23p= 46p
*Smart Price baked beans (1 tin) - 25p
*2 Smart Price vegetable rice packets - 2*26p= 52p (4 servings in total)
*3 carrots - 30p
*1 large onion - 13p
*4 bananas - 37p
*15 Eggs - £1.34, but I will only be using maximum 8 eggs, which makes it around 70p.
*Discounted rye bread - 15p (It was going out of date the next day, but I decided to freeze it)

TOTAL: £5,06

Healthier chocolate cupcake alternative

Hey guys!

Today I decided to try out a healthier alternative to a chocolate cupcake. It came out really yummy, so I do recommend trying it out.

What you need:

Dry  ingredients:

1/2 cups of almond flour (ground almonds)
1/4 cups of wholemeal flour
1/4 cups of white flour
1 tsp baking powder
1/2 cups of brown sugar or 1/4 stevia or substitute with honey or agave syrup

Wet ingredients:

100 g melted dark chocolate
2 eggs
1/3 cups milk (I used cocounut milk, you can use any milk/milk substitute you like)
2 tbsp oil (any oil - coconut oil, palm oli, flaxseed oil etc.)
2 tsp vanilla essence or vanilla sugar
Chocolate chips if you wish

Recipe:

Warm up the oven to 180 C. Mix all the dry ingredients. Now mix all the wet ingredients in a separate bowl. Mix everything together until you have a smooth mixture. Place the mixture evenly into around 10 cupcake wrappers and then tins. Place the cupcakes to the oven for around 20 minutes until the knife or toothpick comes out clean.

When the cupcakes are done, you can make a cream cheese icing or sprinkle some dark chocolate chips on top:)

Welcome lovelies!

Welcome welcome everyone!:) I am glad you found your way to this healthy lifestyle blog and a big thank you for reading!

A bit about me:

I am Jane - a girl with an extreme passion for food, wine, travelling, exercising, media and pretty things. I am originally from Estonia, but living in England at the moment, just about to graduate Bournemouth University doing Communication and Media.  My dream is to travel the world after graduating and explore different tastes and cultures of various countries. I became passionate about food very suddenly around the age of 16-17. I started experimenting with different recipes, started loving cooking more and more and decided to enter a couple of cooking competitions in Estonia. I didn't get through the finals of the first one unfortunately, but I did compete in the finals of the second one when I was 18 (the photo of the dish I grilled at the finals can be found below). Unfortunately I did not win, but I was happy I had even gotten so far. The judges said that all the finalists recipes could go straight to the restaurants menus:))) That made me really happy and it made me want to cook even more. From that time onwards I have been cooking at home as a hobby, but I do feel like I would like to share my recipes with others and also have them written down somewhere so that my children/grandchildren (I do not have children currently) could  maybe also try out some of my recipes one day.

As I already mentioned, I do have a passion for wines as well. While being a student here in Bournemouth, I have not really had a chance to enjoy wines as much as I was hoping to - student life is different. But before coming to England, me and my boyfriend (now ex-boyfriend) used to always buy expensive wines between the two of us and enjoy and explore every sip of it. We loved watching the tv-show 'Oz and James's Big Wine Adventure'. In 2010 we also went to a wine course to learn more about different wines. We loved it! My favourite wines are - Pinot Noir, Riesling and Gewürtztraminer. I love others as well, but these are the particular favourites at the moment. I am planning to go to either Spain or Italy with my mom soon to have a little wine trip, so I will definitely write about it in this blog.

I also enjoy exercising. I've had a gym membership as long as I remember and for me exercising is like therapy. I think the quote 'You are only one workout away from a good mood' is totally correct. Whenever I felt down here in England, I went to gym or a studio class and when I walked out of the gym, I felt great - like a totally different person that I was when I first entered the gym. I did cancel my gym membership this winter, as the gym was a bit too far away and I was scared to walk through the park in the dark, as my friend had an incident etc. I also have been working on my dissertation daily and every night so I have not physically had time to go to gym, but I have been working out at home. I even bought myself a kettlebell :) I am always for a lookout for different exercise routines that can be done at home, so if anyone knows any - send it my way!:) My favourite so far is the Toneitupcom channel on Youtube, you should check it out! 


Being a media student, I also love advertising, marketing, graphic design and journalism. I had a placement in Cosmopolitan magazine in Estonia. I abolutely LOVED working there - all the people there were nice and positive, the office was amazing - we had our own make-up table with a lot of make-up and nail polishes we could borrow!! how amazing is that:) I just overall really enjoyed this experience - I loved writing for them, I liked translating articles. I might still write for them in the future, if they need me to. Unfortunately they do not have any positions available at the moment. Currently I am also writing for UrbanTimes (urbantimes.co). I have written 1 article to them, but am planning to write many more. Why I said I love advertising, marketing and graphic design? Because I studied them in uni (currently still studying advertising) and these were the units I enjoyed the most. I am also a marketing officer for a Business society in Bournemouth Uni - I do all the posters for them and manage their Facebook page. I enjoy InDesign and Photoshop and I am planning to take up more courses on them after graduating.

Pretty things- who doesn't love pretty things? I just dream all the time to once have my very own flat/house that I could decorate myself. Many would not probably spend a majority of their wages on decorations or pretty things for their home, but thats what I would definitely do. It really makes a difference to me if food is served on a pretty red plate rather than on a plain white plate or having a pretty lampshade instead of a boring one. These small things make me very happy. 

Huh, I've written far more about myself than I anticipated to.. Oh well, now you know quite a lot about me and if you have any questions - you're more than welcome to ask.

A bit about this blog: 

As you can probably already guess - this blog is mainly about food. I will post different recipes here, product reviews, restaurant reviews, new interesting foods I have tried, a bit about wines, a bit about exercising, if I find some new videos or pages and a bit about travelling. It might all vary, but this is the plan:)

I hope you enjoy reading this blog and will learn something new:)
