Live Below the Line - DAY 2


Today I woke up at 1.45 pm. I feel a bit ill – I have a runny nose and I sneeze a lot. I really need tea, so I grab the Smart Price tea box. This time, the smell is really off-putting somehow. It just smells of pure wood and cardboard. I am not a fan of this taste either anymore. Maybe I should just stick to water for the rest of my challenge?

It is 2.38 pm now and I have no appetite for the foods I have whatsoever. I am seriously craving some fresh juicy fruits or cucumbers and tomato. I feel like I need some vitamins in my body. Unfortunately all the fresh veggies I have are carrots – might have some later on... As I have no appetite, I will get on with my dissertation and make food whenever I get hungry.

3.20 pm and I am getting slightly hungry. I decide to make a 2-egg omlette with some onions. Mmm it came out really nice, fluffy and flavourful. FYI I decided to let myself use 3 different seasonings throughout this challenge – salt, pepper and potato seasoning(from Estonia). Just some cheese and fresh tomatoes are missing from this lovely omlette.

Around 5 pm I feel like I need a snack, so I make myself a toast and put some carrots on top. Weird combination, but actually quite niceJ  I also cut a banana into pieces and pop it in the freezer for a yummy banana ’ice-cream’ movie snack for later on.

At 7 pm I decide I want to have something fresh for dinner, so I decide to make Korean carrot salad (this is how it is called in Estonia). It does require a dash of vinegar and also couple of other spices, but I decide to use them despite the fact I wasn’t planning to allow myself to do that. I think that I will have leftover stuff after this challenge anyway, so I hope that will make it up.

The salad was good, the banana snacks even better, so I am quite happy with my evening meal :) I am going to try not to eat anything more today.

Tomorrow I am going to the library (I didn't go today as it was raining and I woke up quite late). I need to think what to prepare for lunch. I was thinking to make egg-fried rice with some chicken nugget pieces. Sounds quite nice so I'll give it a go, will let you know tomorrow how it turned out.
