Today I decided to try out a healthier alternative to a chocolate cupcake. It came out really yummy, so I do recommend trying it out.
What you need:
Dry ingredients:
1/2 cups of almond flour (ground almonds)
1/4 cups of wholemeal flour
1/4 cups of white flour
1 tsp baking powder
1/2 cups of brown sugar or 1/4 stevia or substitute with honey or agave syrup
Wet ingredients:
100 g melted dark chocolate
2 eggs
1/3 cups milk (I used cocounut milk, you can use any milk/milk substitute you like)
2 tbsp oil (any oil - coconut oil, palm oli, flaxseed oil etc.)
2 tsp vanilla essence or vanilla sugar
Chocolate chips if you wish
Recipe:
Warm up the oven to 180 C. Mix all the dry ingredients. Now mix all the wet ingredients in a separate bowl. Mix everything together until you have a smooth mixture. Place the mixture evenly into around 10 cupcake wrappers and then tins. Place the cupcakes to the oven for around 20 minutes until the knife or toothpick comes out clean.
When the cupcakes are done, you can make a cream cheese icing or sprinkle some dark chocolate chips on top:)
